I have noticed that there is a remarkable lack of crazy people working at places like mcdonalds, grocery stores, costco, etc. I would think that out of my decades on this earth that I would have seen way more people that just look crazy or just say giberish as they are working or make weird sounds.
But it is surprisingly rare and that does not make sense to me.
You need to define "crazy." Many people with mental illness are in the work force. People who think they are from another planet, talk to themselves, and carry cats around in a basket -- not so much.

Lots of people with disabilities working in retail. Which is great, glad they have jobs.
Some of them are also very annoying. Just like typical people.
I remember dreading going to the grocery store near my old house. They had a cognitively disabled man bringing in the carts from the parking lot. And he was a harasser honestly. You couldn't even be nice to him because he wouldn't stop. So I stopped going there.
You would be surprised. There are federal tax incentives for hiring the disabled, and mental illness can be considered a disability. As long as the person is not considered dangerous to others, and can do the work, the employer gets cheaper labor, and that makes a big difference in profits for fast food or retail. People that go to the drive-thru at a fast food place are not likely to stop because the person at the window talks to themself.
Been there, done that, currently doing it.
Back in my retail days my frontline staff were all smiling, cheerful types. Shipping receiving, night stock, and similar often qualified under some sort of disability.
The night stocking crew at my local supermarket has a partnership with the local prison for work release. Nobody normal wants to work these jobs, so you're basically scrapping from the bottom of the barrel.
