People dislike their job so much that they walk out one day, never tell anybody and never return.

Happens all the time, actually.

I would be fired and they would get the stack of applications out to hire a replacement.

I would like to think I've been reliable enough where someone would call the local police to do a welfare check

If your pattern has been to always show at work or call in when you were sick, then

1) Manager will make a call that first day of absense.
2) Ask any co-workers you may associate with outside of work to reach out to you.
3) Wellness check
4) If nothing comes out of the wellness check (hospitalization or death) and nothing is heard from a spouse or other known emergency contact, then the assumption is made that left your employment without notification.
5) A letter goes out from HR to return to work immediately or steps will continue towards termination, but really the steps are already in process by the time the letter goes out.
6) Official termination.
