I had a phone interview with a company I'm extremely interested in and the job is my number one choice so far on my job hunt.

I had a phone screen last week. I asked about timing and they gave me a very vague answer like, "We are still doing phone interviews for a bit" and I didn't want to push too hard on a timeframe.

It's now been a week. How long should I wait to follow up?

That sounds like a generic response they give to those they want to softly reject.

If they want you, they'll call you.

If I were in your shoes, I would move on.

"Don't call us, we'll call you."

If the company is interested, they will contact you. Meanwhile, keep moving forward with your job search and interview with other companies. Don't look back.

While it's true that if they don't contact you it's typically that they have found someone else; however, with my current job I had to continue to follow-up over and over again with them to stay on their radar as their hiring process was (and still is) ridiculously tedious.

Does not hurt one bit to follow-up with a short email to reiterate your interest and inquire about the status of the position. If they either don't respond or tell you they've moved on, at least you'll know. Good luck!

I wouldn't bother. If they want you, they will let you know.

However, there's always the off chance that they're on the fence and the nice worded email may do the trick. Of course you wouldn't know that...
