After I resigned, "Don", the partner who bit my head off a few times emailed me an apology for his behavior, and indicated he would like me to come back to work. I again advised that it would not work with my other responsibilities, but I would appreciate if my last check included the correct amount for the first pay period that was paid at the wrong pay rate. The check came and did not include that.

My question: Would you pursue what is owed you, or leave it alone? We are not talking about a lot of money here, but I feel that they should pay me for hours worked at the agreed upon rate.
Sounds like you need to get out of "small business" and work for a company with a ticker symbol. At least they can offer predictable schedules and be relied upon to pay you what they state in their offer.

I'm a principle kind of guy, I will fight to get $1 someone cheated me out of. I would send him an email with facts and figures, and say " You evidently missed the $XXX you still owe me, can you please correct that and get a check out asap?"

Don't spend a dollar chasing down a dime. You can stop loss just as easily by seeking better paying employment.

I think of it like this: If one week I was wrongfully terminated from a $40k job and the next week I got hired at an $80k job, I would NOT miss days from my brand new job and jeopardize sure money to get in the last word at a place where I don't even work anymore.

It's about money, sure.

But it's also about career.

And not taking your focus off of the opportunities that are out there that could provide for you so much better.
