You have to assume, that there's a reason why they're not giving you the schedule. It's not a good sign. Without that info, you don't know what you're applying for and being interviewed for, really; it's a key part of the job info. So, yeah, tell them politely that you're turning down the job. If they ask why, you can tell them why.

I've found, that when there's anything unusual about a job description (lack of essential info, in your case), turning it down is the right thing to do. I've followed employers after deciding not to apply for a job, or not getting called for an interview. Inevitably, 6 months later, I see that they're listing the position as open again. I think if you turn it down, OP, you'll later be glad you did.

It makes no sense for employers to hide things like schedules. Some people prefer an evening shift, so why not advertise and hire those instead of bait and switch someone who prefers days.
