What are my options?
I have been here at my present company for almost a year. During this time I have been unfairly singled out and discriminated against. I do have hard proof and several witnesses. I have tried going to the higher ups but have not gotten anywhere. My last step is to contact HR but all they want to do is have a sit down with my managers with whom I have a problem with. Doesn't really bode well for me since its basically my word versus theirs.
I have had stress related medical issues that have attributed to this.
If I do go to HR, what options besided "mediation" could they give? With the economy in its present state I don't see them offering me a position elsewhere.
Is my only remedy to quit?

What type of discrimination are you claiming? If it's just because they don't like you, you don't really have a valid case. If it's because of your race, creed, color, gender, sexual orientation, disability, religion, blah, blah, blah, you will ahve to be able to prove it, but you might have a case.

one instance:
I am asian. One day I brought in an asian dish to eat at my desk. Everyone brings in food and eats at their desks ranging from asian foods to good old fried chicken. My manager comes over and tells me that my food stinks and bans me from bringing in asian food. Now the food was in no way "smelly" all it was , was rice....stir fried veggies and egg over easy. hardly "smelly" Yet when others brought in Indian curry or even a real stinky parmesean cheese pasta dish that brought in complaints from across the building there was no peep. Yet I was given a "warning"

If you have hard proof, then you may have a case. Best case is to collect enough "evidence" and log all incidents so you can reference them and keep track of exactly what the manager said to you. If it is causing you to have medical issues and added stress, then I think you should do something about it. As tough as the economy is, it is not worth the risk to your health.
What you should do may also depend on what you want out of this. If you just want the abuse to stop, you can have a talk to HR, but keep in mind that could have a negative response from the manager. If you wish to take it further, you may also want to consider contacting the EEOC to understand your rights and consult a lawyer as well.

Make sure EVERYTHING is documented, and seek out the advice of a lawyer.

I don't get how you can have both 'hard proof and several witnesses' and 'my word versus theirs' for the same situation. It's hard to offer feedback with such a disparity.

Is it always because of race?
If you think a manager 'just doesn't like you' that is not discrmination. If this stuff is because of your race, then it is.

No, don't quit! Unfortunately, it is better to find another job or be terminated, so you can have money while you are looking.
unfortunately, you will probably lose your job one way or another if you don't start getting along with your manager.
If you sue later on, it is hard to prevail in court unless you are covered by one of the 5/7 protected categories.
