Japan is easy to understand.
But Germany...there has been no direct conflict between these two countries at all.
Why is there a big contrast between German and, say, Britain?
I heard two theories:
(1) Germans just don't like anyone else;
(2) China reminds them of the Nazi era, or at least German media make them feel that way.
German-speaking media outlets don't report too often on China. If they write something it's usually about Tibet, Human Rights violations, the territorial disputes in the South China Sea, Tiananmen, Ai Weiwei, ...
Not a very positive picture. Then again, I wouldn't go as far as to say that Germans outright hate China and Chinese people, it's just that their politics are seen rather critical.

I think the reasons are pretty simple. Most of the countries that have an unfavorable view of China are the "western" countries. The reasons are mostly a matter of human rights, westerners find it appalling how China treats Christians and other seemingly basic rights, such as freedom to speak ones mind, freedom to assemble, freedom of religion of course. Those reasons account for the vast majority of why westerners have a low perspective of China. More minor reasons would be currency manipulation, communist ties, friendly to N Korea, spying on other countries, military buildup, etc. I'm not trying to start a debate on what's true or not or whats hypocritical, but I believe that's why.

But it's kind of off topic. I mean, why Germans (and Italians maybe) have a particularly strong opinion, compared to British, for example. Even Americans' opinion is basically neutral.
