I've been told there are organizations that match people in need of a helping hand with those seeking stays in other countries, one agrees to a certain amount of labor in exchange for bed/board.
Anyone have any experience, godd, bad, or ugly with this type of exchange? I'm particularly interested in possibilities in either Italy or Spain.
I know of such thing here in Croatia; during the summer folks are working in the little town of Ston (north of Dubrovnik) in an old salt plant for accommodation and food.

Havent tried it myself. Check out these links for start, lots of testimonials.
Croatia would certainly be nice--and it's close to Italy.

My next-door neighbor did WOOF. Then her daughter grew up and did it, too. Volunteer Abroad Volunteer Programs
My kid worked for this organization two different summers. He loved it. American Village
A great way for Americans to travel and get paid while they do it is to teach English as a foreign language. There's always a need for it. I studied for my certificate in Prague at ITC and couldn't recommend it highly enough. They guarantee you placement after you graduate.

It seems to be a left brain/right brain thing. I've always had good abilities in math and technical subjects and not so good as far as learning another language.

Yes, my kid did this for two school-years in France.
Many people do it in various countries in Asia, and you are not expected to be bilingual.
Sometimes it works out fine, other times the culture shock is too much.
I know of one woman who had a tough time in Korea and had to quit.
