8 and 5 years old is big enough to look at travel books (preferably with lots of pictures) and research what you would like to see. Then you can have a family discussion about it.
If the kids have some "ownership" of the trip, they will probably enjoy it quite a bit. We tend to not do more than 3 countries in two weeks. Last spring we just stayed in France for 3 weeks.
But you should do what you like, and take lots of pictures, your kids' memory of this trip might be a wee bit fuzzy as time goes on. (Except for the pizza!)
Our then-9 year old loved all of the castles throughout the UK, as well as Stonehenge. Castles and other ancient buildings can be magical.
He enjoyed the live theater of Speaker's Corner in Hyde Park, London as well as Shakespeare's Globe Theater.
In Italy, no matter which town we were in, he had a blast playing soccer (calcio) with the other kids in the piazza. They always good-naturedly welcomed him in. We got to sit there with our wine and watch the fun.
He also loved the Coliseum and Pompeii in Rome, and the gondolas in Venice.
