There are 3 Mexican restaurants in town. La Familia Prado is on Rt 85 south of town and is (in my opinion) the most authentic. Grampa Chuy's is on Main St, some folks really like the food, but to me it's sort of bland. Finally there's Jose Paisano's on Main St, which serves Mexican, Italian and American fare. They're pretty good.
I think an authentic Tex-Mex restaurant could do well here, if you had a good location. Be certain that your location has plenty of parking. Several eateries on the north end of Main St have failed, and I always suspected that the lack of parking on that end of town played a part in their downfall.
