There is a restaurant in Plaza Fiesta with really good tacos. I wish I could think of the name! If you walk in through the entrance by Hamrick's and turn right after the kids video/gaming section - walk past the giant kids "habitrail" and you should walk right into it (maybe go a little left after passing the habitrail). Wow! They have really great Mexican food. Also - you might want to try Don Pedro's. There's one on South Tryon and one in Pineville. I like the South Tryon location better.

Plaza Fiesta is great. IMO the best tacos are at La Poblanita Taqueria. Was that the place you were referring to?
