      Dairy creamers in the deli area were are around 60 degrees and they must be maintained at 41 degrees or colder.

      A few meat items in the deli display case have exceeded the proper use-by date. After the package of meat is opened the entire contents must be used or discarded within 7 days.

      Some meat items for retail sale are not properly labeled. Many packages are missing the name of the manufacturer/processor.

      Sanitizer is not being utilized in the meat department when dishes are being washed. The proper sequence is: wash in soapy water--rinse in plain water--rinse in sanitizer water--air dry.

The following coolers are warm: DELI CASE NEAR THE CHEESE CAKE IS 46.7 F; THE MEAT CASE NEAR THE HOT DOGS IS 48.2 F; THE DAIRY CASE WITH THE SHREEDED CHEESE AND COOKIE DOUGH IS 43 F TO 46 F; THE BUNKER CASE WITH THE STRING CHEESE AND YOGURT IS 47.6 F; THE SERVICE DELI CASE IS 42 F TO 46 F; THE LOWER PORTION OF THE BREAKFAST PREP COOLER IS 48 F. All coolers must maintain a temperature of 41 F or colder in all portions of the coolers. Monitor temperatures closely in coolers.

Exception: portions of a cured or processed meat with unsliced portions still in the original cellulose casing and hard cheeses.
