    • Demonstration of knowledge (Duties of person-in-charge 2-103.11, p 26)
      Complaint received employees were allowing customers in the kitchen. Follow up observed video footage of employee allowing customer to go into the walk in cooler. Education provided to owner and employee during this inspection that the above practice is a violation in the health code and both verbalized understanding. Owner plans on further education with his staff in regards to not allowing persons who are unnecessary to the food establishment operation in the food preparation, food storage or warewashing areas.

  • Food Temperature/Time Control
    • Cold hold (PHF food not maintained at 41° F or below 3-501.16, pg 82)
      Sliding door reach- in cooler in that holds individual carafes of salsa was not maintaining temperature of 41 degrees or less. The salsa was moved to walk-in cooler during inspection and the cooler was put into defrost mode. Be sure cooler is maintaining 41 degrees after defrosting before moving food back.
  • Food Source/Handling
    • Approved Source/Sound Condition (Package integrity 3-202.15, p 54)
      Gallon can of tomatillas found with dent in top seam. Can will be returned for credit and was taken out of service. CORRECTED during inspection.
  • Warewashing
    • Adequate warewashing facilities (No test kit for checking concentration of sanitizer 4-302.14, p 120)
      Need to provide test kit for checking concentration of bleach sanitizer.
  • Plumbing/Water/Sewage
    • Handwashing facilities (Handwashing signs not posted 6-301.14, pg 173)
      Need to post "Employees Must Wash Hands" at all handsinks used by employees per 2005 Food Code requirement. Some of handsinks had proper signage. Signs given to post at handsinks where sign was missing.
  • Facility/Equipment Requirements
    • Food contact surfaces (In-use utensils, between use storage 3-304.12, p 65)
      1) Handle of ice scoop resting in ice in bar ice bin. Need to keep handle inverted between use or store scoop in a cleanable, non-absorbant container. 2) Pop gun holder at bar is getting some build-up inside and needs to be cleaned more frequently.
    • Non-food contact surfaces (Nonfood-contact surfaces: designed, cleanable 4-202.16, p 107)
      Wood surface around handsink in bar needs to be recoated with varnish as the old varnish and stain are peeling away. Owner plans to cover surface with stainless steel or formica in near future.
  • Other Operations
    • Adequate pest control (Insect control devices, design, installation 6-202.13, p 169)
      Some of the fly strips in kitchen were placed in areas above food contact surfaces. Owner is taking strips down and will relocate strips to areas away from food contact surfaces. CORRECTED.

      Bucket of chips on the floor in the serving area. All food shall be 6 inches off the floor. Elevated onto rolling wheels - corrected during inspection.
  • Warewashing
    • Manual washing/sanitizing (Inadequate sanitation of food contact surfaces/utensils 4-702.11, p 137)
      No bleach detected in rag bucket. Bleach concentration should be 50 - 100 ppm to properly sanitize. Corrected during inspection.
  • Plumbing/Water/Sewage
    • Plumbing: installed/maintained (Plumbing maintained in good repair 5-205.15, p 153)
      Water was dripping from faucet at the prep sink and water was turned off to the sink because of this. Need to make repairs so faucet doesn't leak and sink is useable.
