Glove change does not replace hand washing. Employees were observed engaging in activities that contaminate hands (rubbing face or body, cleaning), then replacing gloves without washing hands. An employee was observed rinsing hands under water for less than 15 seconds without using soap and then putting on gloves and handling ready-to-eat food.

All employees handling food were not wearing hair restraints. Food employees shall wear hair restraints such as hats, hair nets, or visors.

Handwashing sink in back (next to warewashing sink) does not have a sign posted telling food employees they must wash their hands. All handwashing sinks used by food employees must have a sign.

1) The scoop in the 5-gallon bucket of pickles under the front counter has no handle scoop is upside down in bucket. Provide handle with scoop and ensure that handle is stored handle up and out of product. 2) The walk-in freezer has food and ice buildup and needs to be cleaned more frequently. The chicken breading station has food buildup and needs to be cleaned more frequently.

The light in the walk-in freezer is not shielded and needs replaced. All lights in food contact areas need to be shielded to prevent breaking and contamination.

Some food in the walkin freezer is stored too close to the floor. Need to raise shelves as needed so all food is stored at least 6 inches off the floor.

Self service brownies at the counter need to be labeled with ingredients or a sign needs to be posted saying ingredients are available upon request.

Raw beef was stored over orange juice in the reach in refrigerator. All raw meat needs to be stored in such a way to prevent contamination of ready to eat foods. Meat belonged to an employee and was removed during the inspection. Corrected.

The scoop in the bulk sugar container is stored with the handle in the product. Store with the handle up and out of the product. The outside of the bulk sugar container is dirty and needs to be cleaned. The floor and doors of the Traulsen refrigerator and the floor of the refrigerator holding chicken broth have buildup and need to be cleaned. The top of the gasket on the ice machine has dried food and debris buildup and needs to be cleaned.

Wet wiping rags are lying on the counter in the kitchen and in the front service area. Need to hold wiping rags in a bucket of sanitizer water between uses. Sanitizer bucket was setting on the floor. This bucket needs to be held off the floor.

Please provide covers in the next 90 days.

Several broken tiles noted in front of breading prep center. Employees report that the tiles warped and came loose a few days ago for no apparent reason. A large piece of cardboard box is covering the area until new tiles and grout can be installed. A contractor is scheduled to repair the tiles this afternoon.
