      Meringue pies, eggs, ham, etc. held at room temperature during breakfast. Only keep out foods that are in the process of preparation, and store meringue pies in refrigerator after cooling slightly - corrected.

      Raw ground beef thawing at room temperature - thaw foods under refrigeration, under running water or as part of the cooling process. Corrected.
  • Plumbing/Water/Sewage
    • Handwashing facilities (Hand sink hot water supply: 100° F, 15 sec, no cold water 5-202.12, pg 149)
      Both restrooms do not have running hot water - shut off because of danger of freezing. Insulate pipes or use other method to provide hot water at all times. Hands must be washed under running hot water as hot as the hands can stand, at least 110 degrees.

      Owner has not tested the water for bacteria and nitrates for many months. Test at required frequencies.

      Obtain a food thermometer with a thin-diameter probe (needle probe) that is tip sensitive to monitor temperatures of thin foods such as hamburgers and ham patties, eggs, etc.

      The only Iowa "No Smoking" sign is on the cafe door upstairs. All entrances used by customers, employees, and delivery personnel need to have the Iowa "No Smoking" sign. Check www.IowaSmokefreeAir.gov or call 888/944-2247 for signs.

      Whipped butter held at room temperature. Whipped butter needs to be held at 41 degrees or below - corrected. Also, remember to keep eggs and waffle batter in the refrigerator when not in use.

    • Approved Source/Sound Condition (Shell eggs, approved source, egg handlers license 3-202.13, p 53)
      Shell eggs are obtained from an uninspected, unlicensed farm. Only obtain eggs from an inspected and licensed source (inspected farm or grocery store). Discard these eggs or remove from the premises. Corrected.
  • Plumbing/Water/Sewage
    • Accessible/soap & towels provided (Handsink maintained/accessible/restricted use 5-205.11, pg 151)
      Pie pan cover was in kitchen handsink. Do not store dishes or utensils in the handwashing sink - it is designated for handwashing ONLY. Corrected.
  • Facility/Equipment Requirements
    • Food contact surfaces (Food-contact surfaces, designed, maintained 4-202.11, p 105)
      Several spoons in a drawer are melted and dirty. Discard these spoons, as they are no longer smooth and easily cleanable.
