    Observation: Date marking was not consistent throughout establishment. Some of the undatemarked foods were dated at time of inspection. By 9-30-15, send letter of correction regarding the establishments procedure for datemarking.

    Observation: There was raw chicken placed over RTE foods, like milk and a jar of mayo. Discussed the dangers of cross contamination of raw chicken with RTE foods. Corrected at time of inspection

    Observation: Wiping clothes were laying on prep countertops.

    Observation: Repeat Violation- PIC handled olives to put in the tuna salad with bare hands.

    Observation: Thermometers were not observed in the refrigerator and coolers.
