      In the walk in cooler several various food items are stored on the floor. Shall keep all food items at least 6 inches above the floor. Recent delivery reported by manager.

      A container of cinnamon/sugar is not labeled. Working containers holding food items taken from original packages shall be identified with the common name of the food. CORRECTED ON SITE.

      One chlorine sanitizer bucket was not at a minimum of 50 ppm. Shall maintain the concentration of chlorine sanitizer between 50-100 ppm. CORRECTED ON SITE.

      Rubber spatula frayed on the edges and no longer a cleanable surface. Spatula was discarded during this inspection. REPEAT VIOLATION. CORRECTED ON SITE.

      The tile behind the warewashing CONTINUES to have some areas of mold buiild up and shall be cleaned more frequently.

      Two buckets of chlorine sanitizer are not labeled. One spray bottle of windex difficult to read the name. Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. CORRECTED ON SITE.

      Three of rubber spatulas on rack in back kitchen were frayed on edges and no longer cleanable. Spatulas were discarded during inspection. CORRECTED.

      The tile behind warewashing machine is getting some mold build-up and needs to be cleaned.

      The two buckets with bleach sanitizer were in excess of required concentration. The concentration was adjusted to proper level during inspection. CORRECTED. Be sure to use test strips to monitor concentration and keep between 50-100 ppm.

      No data plate present on dish machine listing machine use information and information about machine. Contact manufacturer or maintencance company to provide proper plate.

      Spray hose on sink next to dish machine hangs well below level of flood rim. Must maintain a minimum air gap of 1" above the flood rim on the sink when free hanging, not when hooked up.

      Vaccuum breaker device on dish machine is loose. Repair unit. Brace on faucet at mop sink still not secure repair faucet and wall so that faucet is securely attached.

Transfer food to a durable and washable container that can be sealed without the use of duct tape which is uncleanable. Dispose of syrup.

      Replace floor tiles near mop sink. Floor is currently uncleanable in those locations.

      Backflow prevention device on dish machine is loose, tighten screws on head of unit. Spray hose at dish scraping sink is hanging below level of flood rim on sink. Raise spray hose so that nozel of sprayer is at least 1" above the flood rim level to protect against backflow. Also, faucet at mop sink is not properly secured to studs in wall with brace. re-secure faucet brace and repair wall in that area. Re-attach pop dispenser drain piping so that 1" air gap is maintained between pvc piping and floor sink.

      All in-use utensils must be stored in a manner so the handle is not in direct contact with food. handles of scoops in pizza prep cooler are sitting in foods. Also, plastic cup is being used as scoop for parmesan cheese in walk-in cooler. Discontinue this practice and purchase a proper scoop with a handle for this purpose. Ice machine is growing mold on roof of ice storage bin. Clean machine at least quarterly by emptying machine of ice, wash interior with detergent soap, rinse with fresh water, sanitize interior, and allow to air dry before restarting machine. Also, ice machine door is in disrepair.

      Key shelving in walk-in cooler is made of wood which has not been sealed. All surfaces subject to moisture must be sealed so non-absorbant and easily cleanable. Clean and dry rack then seal with 2 coats of varnish or light-colored paint.

      All floors and wall surfaces must be smooth and easily cleanable. Two damaged tiles on floor near mop sink need to be replaced.
