A temperature measuring device with a suitable small diameter probe is provided and readily accessible to measure the temperature of thin foods Observation:There is no digital instant-read food thermometer with thin-diameter probe.
Manual and mechanical warewashing equipment, chemical sanitation - temp, pH, concentration, and hardness Observation:Observed the dishwashing machine is not dispensing sanitizer during the rinse cycle - there was no detectable level of sanitizer in the rinse water.
Indoor and outdoor surfaces Observation:Observed missing, cracked and broken floor tiles in dining room, front entry, by the restrooms, and in the kitchen.
Material characteristics of non-food contact surfaces Observation:Observed wood sections on shelves in kitchen refrigerator and freezer - this wood is not smooth/easily cleanable/nonabsorbent.
Food storage - preventing contamination from the premises Observation:Observed soiled dishes and utensils from lunch stored on shelf above breads, and on countertop where clean pizza pans and cans of food are stored. Observed uncovered food containers in vegetable prep cooler, and a container of lettuce stored in direct contact with an uncovered container of green olives.
Cold and hot holding equipment used for PHF/TCS foods are equipped with at least one temperature measuring device that measures temperature in the coldest part of a hot holding unit or the warmest part of a cold holding unit and located and designed to allow for easy viewing. Observation:The vegetable prep cooler near the rear exit does not have a thermometer.
PHF/TCS foods maintained at 41°F or below, except during preparation, cooling, cooling, or when time is used as a public health control Observation:Observed foods in salad bar ranged in temperatures from 42 to 46 degrees - the salad bar is fairly close to the wall, the back of the unit has an accumulation of dust. The restaurant is warm.
Outer openings are protected Observation:The screen door does not fully close against the door frame, there are visible gaps around the door.
