    • Re-heating to 165°F in 2 hrs (Inadequate re-heating for hot holding (time/temperature) 3-403.11, p 77)
      Brats, egg rolls and other foods were reheated in the ovens but were not temped before placing on the roller grills. Brats were then tested by this inspector - temperature was 122 degrees, and egg rolls were 129 degrees. Employees must test the temperature before placing foods on roller grills and in crock pots; foods must be reheated to 165 degrees first then held at 135 degrees or above. Employee reheated brats and egg rolls. Repeat violation - corrected.

      Obtain digital instant-read food thermometer with thin-diameter probe (needle probe) that is tip-sensitive to monitor temperatures of thin foods.

      There is no Iowa approved "No Smoking" sign at the front entrance. All entrances used by employees, customers and delivery personnel need the Iowa signs. Corrected.

      Beef hot dog was 128 degrees on roller grill and was then reheated to 150 degrees. First, make sure all foods are reheated to 165 degrees before placing on the roller grills, then make sure the grills are hot enough to maintain food temperatures at 140 degrees or above. Corrected.

      Macaroni and cheese in soup warmer was 138 degrees. The employee stated that the food was reheated above 165 degrees and placed in the hot warmer, however, more water was added to the warmer which dropped the temperature. It is barely warm now. The macaroni and cheese was reheated. Make sure the warmer is very hot first before placing the soups and other foods in it. Corrected.

      Fly strip is hanging too close to bread in the kitchen. Move the strip more so that it is not directly above or too close to other foods.

      The city shut off the water this morning, and it is unknown when it will be turned back on. There are provisions for dishwashing, but no provisions were made for handwashing. In the future, store water ahead of time for handwashing in the kitchen. Today, use bottled water from the shelf for washing hands.
