Food Protection (Food on display not protected from contamination 3-306.11, p 70) This food establishment has food items that are on display for self serve that are not pre packaged such as sliced fruit. Food on display shall be protected from contamination by the use of packaging, counter service line or salad bar food guards, ie: sneeze guards, display cases, or other effective means.
Manual washing/sanitizing (Inadequate sanitation of food contact surfaces/utensils 4-702.11, p 137) This food establishment continues to only have a two compartment sink and is not properly wash, rinise, and sanitizing the large equipment which is not fitting in the dish machine. Shall install a three compartment sink for proper sanitizing. The warewashing sink shall be large enough for complete immersion of equipment. This establishment has a quote from Reinhart for a three compartment sink due to be installed in the spring.
Food contact surfaces (Utensils not maintained in good repair 4-502.11(A), p 128) One frayed spatula was discarded during this inspection. Shall have utensils in good working condition to prevent contamination. CORRECTED ON SITE.
Adequate pest control (Outer openings, protected 6-202.15, p 170) Gaps under or around exterior side screen door between the kitchen and the dry storage. Shall apply weatherstripping to prevent entrance of rodents and pests. REPEAT VIOLATION.
Inside physical facilities designed/maintained (Drying mops, air-dry 6-501.16, p 177) After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equpment, or supplies. REPEAT VIOLATION.

Food Temperature/Time Control
Cold hold (PHF food not maintained at 41° F or below 3-501.16, pg 82) THE COOLING UNIT HOLDING THE TOMATOES IS AT 42-44 DEGREES AND THE CUT TOMATOES SITTING OUT ON THE TABLES ARE AT 55-60 DEGREES. SHALL KEEP THE CUT TOMATOES ON THE TABLES IN STAINLESS STEEL WITH ICE. THE COOLING UNIT HAS RACKS TO PREVENT THE FOOD FROM FREEZING, DURING THIS INSPECTION THE RACKS WERE TURNED AROUND TO HAVE THEM CLOSER TO THE BOTTOM OF THE COOLER AND THE FOOD ITEMS ARE HOLDING AT 41 OR LOWER. THE TOMATOES WERE HELD LESS THAN 4 HOURS AND WERE ALL UNUSED TOMATOES WERE DISCARDED.
Hot hold (PHF food not maintained at 135°F or above 3-501.16(1), p 82) THE HAMBURGERS SITTING UNDER THE HEATED LIGHT ARE AT 120 DEGREES WHICH ARE USED WITHIN 15-20 MINUTES WHILE BEING SERVED. SHALL KEEP THE BULK OF THE HAMBURGERS IN THE OVEN WHICH IS HOLDING AT 150 DEGREES OR HIGHER AND ONLY A SMALL AMOUNT OF HAMBURGERS UNDER THE HEATED LIGHT WHILE SERVING.

MANAGER STATED FOOD ESTABLISHMENT HAS HAD RECENT DELIVERY. SHALL KEEP ALL FOOD ITEMS AT LEAST 6 INCHES ABOVE THE FLOOR.
