      Direct bare hand contact with ready to eat foods was observed, and it is not permitted. Corporate office needs to apply for a variance with the Iowa Department of Inspections and Appeals and keep a copy on file with the bare hand contact plan before this practice is allowed. Until then, all employees must wear gloves when handling ready to eat foods.

      Faucet at three-compartment sink drips into the sanitizing sink. Make sure the faucet does not drip into the sanitizing solution - this will dilute the sanitizer and then it won't be effective in killing germs. Corrected.
