Chemical dishmachine shall operate at 50-100 ppm. The one I tested was nto dispensing any sanitizer.
- Adequate warewashing facilities (No test kit for checking concentration of sanitizer 4-302.14, p 120)
Shall obtain test strips to test sanitizer solution.
- Plumbing/Water/Sewage
- Plumbing: installed/maintained (Plumbing maintained in good repair 5-205.15, p 153)
Shall place a drain on the beer dispenser holder.
- Facility/Equipment Requirements
- Thermometers provided/accurate (Thermometers: provided & accessible 4-302.12(A), pg 120)
Shall place a thermometer in all cold hold units.
- Food contact surfaces (Food contact surfaces not clean to sight or touch 4-601.11, p 129)
Shall clean the ice machine - lots of mold noted. Shall place all straws/single use containers into plastic sleeves/dispenser units.
- Food contact surfaces (Storage: equipment/utensils, single service & use items 4-903.11, p 141)
- Walls, floors, ceiling, lighting (Lights not shielded 6-202.11, p 168)
Shall place light covers over both lights in the vent units. Shall fix the floor in the walk-in cooler.
- Ventilation (Ventilation system, air ducts, filters not kept clean 6-501.14, p 177)
Shall clean vents above the grill fryer areas. The vents shall be in working order in both bathrooms.
- Other Operations
- Inside physical facilities designed/maintained (Physical facilities, not maintained in good repair 6-501.11, p 176)
Shall fix gaskets on doors to the chest fridges. Shall clean around the grease trap.
