      A plastic squeeze bottle of ranch dressing holding at 64 degrees. Manager discarded the remaining ranch dressing during this inspection. Manager reports the ranch dressing is usually kept on ice. Shall keep the ranch dressing at 41 degrees or lower. CORRECTED ON SITE.
  • Food Source/Handling
    • Date Marking (Inadequate date marking of ready-to-eat foods 3-501.17, p 83)
      Over all date marking is within compliance. Opened package of hot dogs are not date marked. Refrigerated ready to eat PHF shall be date marked if not used within 24 hours. All unused food items shall be discarded in 7 days. CORRECTED ON SITE.

  • Warewashing
    • Adequate warewashing facilities (No test kit for checking concentration of sanitizer 4-302.14, p 120)
      Using bleach as a sanitizer and no test strips available. Shall have chlorine test strips and maintain the concentration at 50-100 ppm.
  • Facility/Equipment Requirements
    • Food contact surfaces (Food contact surfaces not clean to sight or touch 4-601.11, p 129)
      Soda dispenser has build up and some mold observed. Manager reported the dispensers are cleaned about every two weeks. Shall wash rinsie and sanitize more frequently to prevent contamination.

    • Adequate pest control (Outer openings, protected 6-202.15, p 170)
      Gaps under or around exterior door suggest applying weatherstripping to prevent entrance of rodents and pests.
    • Handling/storage/labeling of toxic items (Chemical sanitizers: Food-Contact Surfaces (40CFR180.940) 7-204.11, pg 184)
      Sanitizer in excess of required concentration over 200 ppm for bleach sanitizer. Shall maintain at 50-100 ppm. CORRECTED ON SITE.
    • Refuse, recyclables, returnables (Covered receptacles 5-501.113, p 162)
      Receptacles and waste handling units for refuse, recyclables, and returnables used with materials containing food reside and used outside the food establishment shall be designed and constructed to have tight-fitting lide, doors, or covers.
    • Inside physical facilities designed/maintained (Drying mops, air-dry 6-501.16, p 177)
      After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. CORRECTED ON SITE.
  • Food Temperature/Time Control
    • Cold hold (PHF food not maintained at 41° F or below 3-501.16, pg 82)
      The walk in cooler is holding at 43 to 45 degrees. Manager states the cooler is going to be repaired today. The only PHF holding in the walk in cooler at this time is the over flow stock of milk. The milk was placed in the walk in beer cooler which is holding at 41 degrees or lower. Shall not use the walk in cooler for any PHF until this unit is repaired. The ranch dressing is holding at 62 degrees and the manufacturer label states keep refrigerated. The ranch was discarded during this inspection. The manager plans on purchasing individual packets of ranch instead of using a squeeze bottle. If using the large quanitity ranch containers shall keep at 41 degrees or lower per manufacturer label.

      A box holding several large cans of ketsup is being stored on the floor. Shall keep all food items at least 6 inches above the floor to prevent contamination. CORRECTED ON SITE.
  • Plumbing/Water/Sewage
    • Handwashing facilities (Handwashing signs not posted 6-301.14, pg 173)
      The handwashing sink does not have a sign posted when employees must wash their hands. Shall post the sign at all handwashing sinks including the restrooms. Given signs during this inspection to post at all the handwashing sinks.
  • Facility/Equipment Requirements
    • Non-food contact surfaces (Equipment: location/installation/repair/adjustment 4-401.11, 4-402.11, 4-501.11, p 121-123)
      The reach in milk cooler has duct tape applied to the gaskets. Shall repair or replace the gaskets to make a tight seal. REPEAT VIOLATION.
    • Walls, floors, ceiling, lighting (Toilet rooms: not enclosed, no self-closing doors 6-202.14, p 170)
      The women's restroom has self closing doors but are not working properly. Shall adjust the self closure to make tight fitting and self closing.

      With the ownership change a separate handwashing sink must be installed. A variance was granted to past ownership for existing license, but code must be complied with for new license/owernship change. You have 1 year to comply with this code requirement.

    • Thermometers provided/accurate (Thermometers: inaccurate 4-203.11 & 12, p 107, 4-502.11(B)(C), p 128)
      Thermometer doesn't work in stand-up refrigerator.
    • Food contact surfaces (Cleaning frequency/cross-contamination prevention 4-602.11, p 130)
      Ice shoot on pop dispenser and ice bin above needs cleaned.
  • Other Operations
    • Adequate pest control (Insect control devices, design, installation 6-202.13, p 169)
      Quite a few flies in kitchen area. Look at trapping stations for these flies.
