    • Thermometers provided/accurate (Temperature device not designed to check temperature in thin foods (meat patties) 4-302.12(B), pg 120)
      Meat thermometers are not allowed because they can not be recalibrated. Thin probe instant read thermometer needed to check thin foods such as but not limited to: burgers, fish fillets, etc.
    • Food contact surfaces (Food contact surfaces not clean to sight or touch 4-601.11, p 129)
      Personal items stored on slicer- it was not being used at time of inspection and firm stated cleaned before every used, cleaned corrected on-site.
    • Ventilation (Ventilation system, air ducts, filters not kept clean 6-501.14, p 177)
      Excessive dust on two of the filters.

    • Adequate pest control (Inadequate or improper pest control 6-501.111(C), p 178)
      Bar knats observed at bar area.
    • Inside physical facilities designed/maintained (Physical facilities, not maintained in good repair 6-501.11, p 176)

    • Handling of ready-to-eat foods (No direct bare hand contact with ready-to-eat foods 3-301.11, p 59)
      Observed bare hand contact with ready to eat foods- cooked chicken and taking bread off the grill. Shall use gloves, utensils, deli tissues, etc. to prevent bare hand contact with ready to eat foods- cooked foods, salads, sandwichs, toppings, drink garnishs, etc.
  • Warewashing
    • Adequate warewashing facilities (Test kit requirement not met 4-501.116, p 128)
      Need chlorine test kit to check sanitizer concentration. Should test to 50-100ppm. 1 teaspoon of regular bleach to 1 gallon of water.
  • Plumbing/Water/Sewage
    • Handwashing facilities (Handwashing signs not posted 6-301.14, pg 173)
      Signage shall be posted at each hand sink used by employees (including restrooms) reminding them to wash hands.
  • Facility/Equipment Requirements
    • Thermometers provided/accurate (Thermometers: provided & accessible 4-302.12(A), pg 120)
      Need a metal stem probe thermomter to check cooking, hot holding, and reheating temperatures.
    • Food contact surfaces (Storage: equipment/utensils, single service & use items 4-903.11, p 141)
      Observed styrofoam bowls stored on the floor. "to go" containers shall be stored covered or inverted in between uses to protect against contaimination.
    • Ventilation (Ventilation system, air ducts, filters not kept clean 6-501.14, p 177)
      Hood vent filters above stove and fryer not kept clean.

      Observed a large gap at back door.
    • Smoking area: designated/posted (Smoking prohibitions in public buildings: signs posted, ashtrays present, smoking observed. IAC 641-153)
