Meat thermometers are not allowed because they can not be recalibrated. Thin probe instant read thermometer needed to check thin foods such as but not limited to: burgers, fish fillets, etc.

Personal items stored on slicer- it was not being used at time of inspection and firm stated cleaned before every used, cleaned corrected on-site.

Observed bare hand contact with ready to eat foods- cooked chicken and taking bread off the grill. Shall use gloves, utensils, deli tissues, etc. to prevent bare hand contact with ready to eat foods- cooked foods, salads, sandwichs, toppings, drink garnishs, etc.

Need chlorine test kit to check sanitizer concentration. Should test to 50-100ppm. 1 teaspoon of regular bleach to 1 gallon of water.

Signage shall be posted at each hand sink used by employees (including restrooms) reminding them to wash hands.
