      Dishes and utensils in kitchen and waitress station are washed, sanitized then rinsed. The proper method is to wash, rinse in clear hot water, then sanitize for at least 1 minute, then air dry. Drain middle sink and put sanitizing solution in third sink - corrected.

      Knives are placed in kitchen handsink. Keep clean knives in a wall-mount knife holder or container. Do not store utensils in handsink - for handwashing ONLY. Corrected.
