      Food prep personel using bare-hand contact with ready-to-eat foods. Bare-hand contact with ready-to-eat foods is no longer allowed. Use of deli tissues, tongs, or spatulas or single-use gloves shall now be used. Manager CORRECTED food handling procedure during inspection. Instructing employees to use gloves with food prep/ready-to-eat foods. Manager is looking into ordering an appropriate type of scoop for serving fries.

      Clean blender bowl. Clean ceiling area of ice machine. Keep ice scoop inverted out of ice in machine, removed today. Using square storage container for scoop in flour and rice, removed today, provide scoop with handle and keep inverted. Store lids for front line coolers off floor when not in use, suggest rack.

    • Handwashing facilities (Hand sink hot water supply: 100° F, 15 sec, no cold water 5-202.12, pg 149)
      All hand sinks must provide water at a temperature of 110 degrees through a mixer valve. In addition, a self-closing, slow-closing, or metering faucet shall provide a flow of water for at least 15 seconds without the need to reactivate the faucet. Adjust the temperature and the duration of the flow of water and the water temperature at all hand sinks, including at the beverage station, at the expo station, at both ends of the cook's line, and the sink in the dishwashing area.

      A drain line from the drainboard at the north end of the bar is disconnected. Repair as needed. The drain line at the beer tap catch tray is kinked. Install a plastic 90 at this location. The water to the dipper well is hot waterl. This is not in compliance with local plumbing codes. The water should be cold. Plumbing inspector to re-visit.

      The lid for a well at the expo station is not properly constructed. Insulation is not a cleanable material.

      The concrete floor in the dry storage room where soft drink syrup will be stored does not appear to be cleanable. The floor must be smooth and easily cleanable. Re-surface as needed. Suggest quarry tile.
