Gloves need to be worn when cutting up fresh fruit for garnish bare hand contact is no longer allowed.

Properly wash pop nozzles daily will Oasis sanitizer, soda is not a sanitizer and should only be used if build-up occurs then run through proper cleaning procedure (wash, rinse, sanitizer, and air-dry).
- Adequate warewashing facilities (No test kit for checking concentration of sanitizer 4-302.14, p 120)
Test strips needed to check sanitizer with. Iodine sanitizer is used in the glass dishmachines at all bars and service bars. Also strips are needed for the sanitizer in the mop closests. Ensure that an approved sanitizer (Oasis) is being used in all bars not a disinfectant.
