Only holding 130*F. Dial may need replaced or unit repaired. Switched eggs with fruit compote. DO NOT HOT HOLD ANY POTENTIALLY HAZARDOUS FOOD IN THAT BASIN TO ENSURE FOOD IS HOT HELD 135* F or above. Far right side basin also does not work and may need replaced (no food held in that basin during inspection).

Bleach-water was made during insertions. Corrected on site. Do not mix soap with bleach )soap deactivates bleach- must keep separate).

Sanitization of food contact surfaces - before use and after cleaning Dish machine sanitizer was testing 10ppm. Changed to a different sanitizer container. Now testing 100ppm. CORRECTED ON SITE. Overtime santizer container may lose concentration when open due to evaporation. Test frequently to ensure concentration is at proper level.
Material characteristics of non-food contact surfaces Dry storage gray painted shelving is worn and chipping. Resurface with new coats of paint to make smooth and easily cleanable.
