      Hot water in third sink was 146 degrees and dishes had already been rinsed in that sink. The temperature needs to be at least 171 degrees before using to rinse dishes and utensils. Check temperature again and re-rinse dishes and utensils. Corrected.

      Clean the lids of the bulk ingredient containers in the storeroom - they are dirty.

      Plastic tub to be used for storing sandwiches was on the floor. Store this tub and all food contact surfaces at least 6 inches off the floor. Corrected.

      Employee placed cutting board in third sink and immediately took the board out, without verifying that the rinse temperature was at least 180 degrees. Check the temperature with a thermometer first, and let items sit in the sink for at least 10 seconds. Repeat.
  • Other Operations
    • Adequate pest control (Rodent bait stations, not covered & tamper proof 7-206.12, p 185)
      There is a glue trap and a covered bait station in the storeroom, but in the access opening under the stairway there is an open bait station. Discard this open bait station as it is not approved for use in food service establishments. Corrected.
