Sliced tomatoes in plastic container on counter were at 55 degrees. Fresh cut tomatoes are now considered a potentially hazardous food and are to be refrigerated at 41 degrees or less after being cut. Manager was unaware of inclusion of cut tomatoes as a PHF. The tomatoes were discarded. CORRECTED. Recommend utilizing an ice bath for tomatoes from this point on. Be sure to monitor temperature and keep tomatoes at 41degrees or less.
