      Completely remove date labels each time the container is washed. Bottoms of fryers have an accumulation of grease and food debris.

      There are rodent droppings in store room and in small closet outside the store room. You need to clean up these droppings so you can ell if infestation is current.

      Have your pest control operator investigate the possible prescence of rodents
    • Handling/storage/labeling of toxic items (Inadequate separation from food, equip, utensils, linens, single service 7-201.11, p 182)
      Recommend the toxics stored over the microwave be moved so no possibility exists that could cause a cross contaminitaion of food.

      When you pull food out of the freezer that is date marked, put a second date on it.
