- KDA_3_50116A2 - --The following foods were stored in reach in cooler next to handwashing sink: cut lettuce 50, blue cheese 56, chicken breasts 46, egg mixtures ranging from 46-51. Person in charge said egg mixtures and cut lettuce was placed in cooler 2 hours ago. Person in charge said chicken breasts, blue cheese, and one container of egg mixture was placed in cooler over 4 hours. (corrected on site-egg mixture and cut lettuce moved to walk in cooler for quick cooling and the rest of foods disposed of in trash) Reach in cooler was unplugged at inspection arrival and had an ambient temperature of 50. After 30 minutes of plugging it back up, the ambient temperature was 39.3. Two full plastic containers of half and half stored on front counter had temperatures of 48-72. Person in charge said they were placed there over 4 hours ago. (corrected on site-all containers disposed of in trash) Inspector recommended not overfilling containers and placing a lid on plastic containers.
- KDA_3_50118A2 - --An opened package of ham was stored in reach in cooler next to fryers without open date. Person in charge said it was opened on 9/28 over 24 hours ago. (corrected on site-ham properly dated)
- KDA_4_60111A - --Onion dicer stored clean according to person in charge on clean dish table next to walk in cooler had visible dried debris. (corrected on site-dicer moved to 3-vat sink for proper cleaning and sanitizing)
- KDA_5_501113 - --Doors on outside trash receptacle were left open when not in use.
- KDA_6_50112A - --Floors under ICEE machine have build-up of trash and soil.
- KDA_7_20111A - --A spray bottle of degreaser was stored on tray with nozzle facing toward a package of croissants on counter next to fryers. (corrected on site-degreaser relocated) This was the only chemical violation noted throughout entire establishment.
- KDA_Defacto - --3-vat sink had a reading of 100 ppm chlorine. Establishment uses chlorine as sanitizer and has chlorine test strips. --chicken nuggets 192, chicken breast 198 --East hot holding unit 1-hamburger 176, 183 West hot holding unit-chicken 163, 141 --Establishment uses Schendel for monthly pest control treatments. The last treatment was on 9/19/15. --French fries 197 --front counter reach in cooler-whip cream 38.3 walk in cooler-cheese 41, half and half 40, chicken breast 36 ice cream dispenser-ice cream mix 40 drive-thru reach in cooler-milk 34 prep reach in cooler-ham 39, cheese 40 walk in freezer-all frozen reach in freezer-all frozen --Packages of pulled pork and chicken breast were being thawed in walk in cooler. --Wiping cloth solution had a reading of 50 ppm chlorine.
