- 4-501.116 - --Test kit not being used to test the strength of the sanitizer in the bucket in the service/bar area. Sanitizer was over 200ppm according to inspector test strip. COS education, dilution to 50ppm.
- KDA_3_30414B1 - --Bucket of sanitizer at over 200ppm chlorine as santiizer strip turned a dark purple, in service/bar area. COS diluted to 50ppm chlorine. Establishment is also adding soap to the sanitizer which is not an approved practice according to the food code.
- KDA_4_20211A2 - --In walk in cooler, container holding cooked brisket with cracked rims and cracked off corners. Lids to container is also cracked. PIC will replace.
- KDA_4_60211E4 - --Interior of ice bin soiled with limescale and mold buildup on interior surface and on divider plate.
- KDA_Defacto - --Cold hold unit in kitchen is not working, but was not in use at time of inspection. PIC was getting a replacement. --Contracted pest control comes monthly --In walk in cooler, cooked turkey at 36F, cooked ribs at 38F, baked beans at 38F, cooked brisket at 39F in reach in cooler under service counter, commercially prepped potato salad at 36F frozen foods frozen solid --mop sink fine, handsink in toilet room at 102F (W), 129F (M) handsink in kitchen at 105F --Turkey at 155F, baked beans at 160F in hot hold steam table top unit.
