    Food facility does not have a Health Awareness Reporting Procedure for food employees. Requirements reviewed - reference furnished (email)
  • Hair Restraints (46.152)
    Food employees observed in pre area, not wearing proper hair restraints, such as nets, hats. Corrected during inspection
  • Sanitizing Solution Testing Device Provided & Used (46.634 & 46.674(e))
    Food Employee is not using available sanitizer test strips or test kit to determine sanitizer concentration.
  • Chemical Sanitization for Mechanical or Manual Warewashing Equipment (46.674(d))
    Chlorine chemical sanitizer residual detected in the final sanitizer rinse cycle of the low temperature sanitizing dishwasher was 0 ppm, and not 50-100 ppm as required. Unit shut down - facility switched to three bowl operation. All dish ware moved to kitchen - rewashed. Service arrived during inspection. Unit was corrected. Facility is to monitor to assure compliance. Repeat violations of a similar nature may result in summary action.

    Food employees observed not wearing hair restraints such as hats or nets. Correct by tomorrow.
  • Date Marking of Ready-to-Eat Potentially Hazardous Foods (46.385(b))
    Potentially hazardous ready to eat food (i.e. cooked ham, pasta, & chicken) prepared in the food facility and held for more than 48 hours were not date marked. Regulations reviewed--implement immediately.
  • Equipment in Good Repair & Proper Adjustment (46.671)
    Observed a leak from the middle basin of the 3-bowl sink slowly dripping into a pan. A small hole is present--a custom sink in being built--approx 6-8 weeks for delivery. Keep water contained until replaced.
  • Sanitization Requirements, Frequency and Methods (46.731)
    Wiping cloths observed stored in sanitizer bucket with sanitizer concentration of >200 ppm (must be 50-100 ppm). Remade to 100 ppm.
  • Availability, Capacity & Pressure of Water (46.805)
    The hot water to the low temperature warewash sink was 109*F and not 120*F required for both wash and rinse. The hot water tank was turned up, & at last check the wash was 128*F and the rinse was 132*F.
