Product in reach in Traulsen cooler in side prep area was held at 47 °F rather than 41°F or below as required. Ambient temperature measured at 45*F. All product was transferred to walk in cooler. Unit to be serviced. Facility to contact agent at 724-443-1585 Ext 255 when corrected prior to use.

- Time as a Public Health Control for Potentially Hazardous Foods (46.385(c))
Time in lieu of temperature being used in the food facility to control ready to eat potentially hazardous foods without written procedures or documentation to verify disposition of food. This pertains to the stainless bowls labeled for each dressing that is shaken up w/ the lettuce. Corporate policy is to change out each pan every hour, but the time was not documented on the label. The employee forgot to place the time on the labels. Reviewed w/ management.

Observed food residue on the "clean" knives hanging on the magnetic strip in the prep area. All removed, washed, rinsed, & sanitized during the inspection.
- Using Dressing Rooms & Lockers (46.981(j))
Noted employee clothing/purse stored w/ on the single service stock shelf. They were removed & placed in designated area provided. This is a repeat violation--on food stock shelves previously.
