A food employee was observed slicing lemons on the slicer - a ready to eat food - with bare hands. Correct today.
- In-Use Utensils & Between Use Storage (46.302)
Numerous food dispensing utensils observed stored in the food and not with handle above the top of the food and the container. Ice scoop in ice bin at bar. Correct all today.
- Water Temperature & Pressure when Hot Water is Used for Sanitizing in Mechanical Warewashing (46.675(d)(e))
The hot water used for sanitizing in the mechanical warewashing machine did not reach 180°F (or 165°F for stationary rack). Adjustment was made on this unit. Rinse temperature is now 184F. Facility must re-run all dishware/utensils through dishmachine to ensure properly sanitized. Corrected.

Observed numerous clean plastic/metal inserts, plastic cups being stored wet in a manner that does not allow for draining and/or air drying (wet nesting). Correct today.

(B) FOUND SOME FLOOR DRAINS IN KITCHEN WITH AN ACCUMULATION OF OLD FOOD DEBRIS IN THEM. 3 DAYS TO CORRECT.
