Temperatures included sliced tomatoes 51, american cheese 44, cheddar cheese 51, turkey 46, Ham 45 to 61. Internal product must be maintained at 41 degrees F or blow or time in lieu of temperature used for all potentially hazardous foods.

Eight thermometers indicated 26 degrees F rather than 32 degrees F when calibrated using ice point calibration. Thermometers adjusted during inspection. Discussed proper calibration method with PIC.

Black residue observed on the interior of the ice machine around ice forming chamber in top of unit and around the ice deflector in the ice bin.
