Two six inch deep tubs of cooked pasta, dated 3/16 had temperaqtures of 48-50*f, cello wrap covering needs to be pulled back on corners until cooling to 41 is complete, spread the tubs out in the cooler, otherwise, you're just making it a big thermal mass again. correct immediately.

Box of fruit fly infested sweet potatoes in sald prep area removed during inspection. Outside of these flying insects, only three small fly like insects noted in various locations of downstairs areas, much better control measures, thank you.
