Observed the internal temp of salsa was 49.8, cooked rice 55.5 and leafy greens 50* all product was discarded. The ambient temp of the reach in unit was 55*. This unit was undercounter reach in cooler on the prep line. COS

Food contact surface of plastic tubs/inserts are not smooth, easily cleanable and/or resistant to pitting, cracking or chipping. Several crocks and plastic storage containers are cracked or chipped. This is a repeat violation.

Observed the data spec plate for the commercial dish machine is missing. The unit is a high temp unit.

Observed plastic crocks are melted and are still in used with food. All food surfaces need to be smooth and easily cleanable. Observed the sliding doors for the bulk ice machine are busted.

Observed the blade for the veg. choppers and the tomato slicer has old encrusted food. Observed dirty knifves and scoops hannging with clean utensils. Observed the bulk ice machine has black and pink slimy residue. Machine was shut down and ice was dumped. Unit is down until cleaned and sanitized.
- Availability, Capacity & Pressure of Water (46.805)
Observed the hand sink in the prep area has not hot water, the temp of the water is 80*. All of the other sinks in kitchen have water temp of atleast 110*.
