Four gallons, two half gallons and six quart containers of Lehigh Valley milk, 1% and low fat milk in the retail case past the expiration dates of 9/25/11, 9/30/11, 10/2/11 and 10/3/11. The owner removed the milk from retail sale.

Old food residue on the blade, frame and housing of the meat slicer on the left side of the deli prep counter. The slicer was disassembled for cleaning. *Old food residue around the rim and inside the crock pot at the deli counter. The crock pot was placed at the sink for cleaning.
Quality of Water (46.804)
Current water test for coliform bacteria is not available. The owner stated that trace amounts of coliform were found in the system. The system was shocked and check samples taken. DEP did not place the facility on a boil water. The owner will mail the test results to the PA Dept. of Agriculture, Food Safety.

Approximately 15 - 25 old rodent droppings are on the shelf and floor in the back left corner of the storage area. Unused equipment, boxes, bags, etc. are stored in the area. The owner stated that the storage area will be cleaned out by 10/15/2011.

Chlorine test papers to monitor sanitizer concentration are not available. The owner ordered the test papers.

Dirt on the exteriors of thr plastic storage drawers under the deli prep table. *Old food residue on the edges and in the container of the crock pot in the deli area. *Sugar spilled in the storage drawer at the self service coffee counter.

Wiping cloths observed stored in sanitizer bucket with sanitizer concentration of 0 ppm. The container was refilled with 100 ppm chlorine and water.
