  • Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
    Internal product temperature of deli meat sandwich wrap which is part of new choose two program was at 52 degrees F rather than 41 degrees F or below. PIC re-arranged service line display so sandwiches and salads were down in refrigerated display rather than sitting on top of it. Leftover sandwiches and salads are saved for the next day and need to be maintained at 41 degrees F or below.
  • Cleaning Ventilation Systems (46.981(d))
    Ceiling vents in kitchen have a build up of dust on them and need cleaned.

  • Food Temperature Measuring Devices Calibrated (46.691(b))
    Thermometers for ensuring proper food temperatures are not calibrated and/or functioning properly. One digital stem type thermometer was not functioning properly. Room temperature was reading 122 degrees F and probe was loose from thermometer. Removed from use. Recommend thermometers are calibrated on a regular basis.

  • Water Temperature & Pressure when Hot Water is Used for Sanitizing in Mechanical Warewashing (46.675(d)(e))
    The hot water used for sanitizing in the mechanical warewashing machine did not reach 180°F. Dishwasher final rinse gauge temperature was not reading above 124 degrees F during inspection. Final rinse may have not been turning on in dishwasher. Wash gauge was at 164 degrees F. Students are served on disposable trays and use disposable silverware.
  • Food Temperature Measuring Devices Calibrated (46.691(b))
    Thermometers for ensuring proper food temperatures are not calibrated and/or functioning properly. One stem type thermometer indicated 44 degrees F rather than 32 when calibarted using ice point calibration. Removed from use.

  • Cooling, Heating, & Holding Capacities (46.611)
    Student self-service Gallon pump containers of salad dressings to include mayonaise and ranch dressing labeled as refrigerate after opening and keep refrigerated are offered for self-service from a display that is cooled only from the bottom by an ice pack covered with a cloth towel in a perforated steel pan. It does not appear as though this method is capable of keeping all the product in the container at or below 41* F. Ice bath was put in use during inspection
