    --Observed cardboard boxes of food stored directly on the floor in walk-in freezer area, rather than 6 inches off of the floor as required.
  • Disposition of Unsafe Ready-to-Eat Potentially Hazardous Foods from Lack of Temperature Control (46.441(5)(6))
    --Deli meats and cheeses, potentially hazardous ready to eat foods requiring date marking, in the deli area, were not date marked. Reviewed and left a copy of PDA's guide for Date Marking with the person in charge. Facility sells Boar's Head Meats/cheeses which are switched out every Tuesday with new product. The person in charge stated that they will date all product beginning tomorrow.

    --Prepackaged sandwiches are not labeled properly with the name of product, ingredient statement, net weight, distributed by statement and allergen declaration. Reviewed and left a copy of PDA's labeling guideline with the person in charge.
