    Meats and other foods are stored uncovered in the walk-in cooler. Cover all food in the walk-in cooler immediately and at all times while in storage.
  • Wiping Cloths Use Limitations (46.304)
    Observed wet wiping cloths on prep tables, not being store in sanitizing solution. Store wiping cloths in a sanitizing solution when not in use.
  • Food Storage Requirements & Prohibited Areas (46.321)
    A bag of rice and bags of potatoes and onions are stored on the floor of the dry storage room. Remove all food from the floor immediately and store it at least six (6") inches above the floor at all times.
  • Cooling Methods & Food Containers Used/Arranged (46.384(c)(d))
    A pot of soup at 145F was cooling in a refrigerator. Food must be cooled rapidly. Place the soup in shallow pans and then into the walk-in cooler or place the pot in a sink, surround it with ice and stir it until the temperature of the soup is 70F or less and then put it into a refrigerator or walk-in cooler. Corrected.
  • Hot Holding Potentially Hazardous Foods (46.385(a)(1))
    Chicken being hot held on a steam table had internal temperatures of 110F, 115F and 120F. Pork being hot held in a hot holding unit had internal temperatures of 118F. Food was on display for less than two hours. Reheat all food to 165F immediately and hot hold all food at temperatures of 135F or higher at all times. Food was reheated.
  • Materials in Multiuse Utensils & Food-Contact Surfaces (46.521)
    Rice is being stored in a non-food grade plastic container. Purchase food grade containers for food storage.

    The display cooler used to store chicken requires cleaning to remove grease and meat juices. Clean the entire display cooler and maintain it in a clean condition.

    Upon entering this facility I observed that the drain line for the three-bay sink was disconnected and a snake was being run through the line. The facility was ordered to close until the problem was corrected. Drain line was opened while I was onsite and facility was allowed to re-open.

    Lights are not shielded or shatter proof over in the hot holding unit. Replace the lights with shielded or shatter proof heat lamps.

    A kitchen employee did not wash his hands after drinking. Gloves were worn, but these must be changed and hands washed after eating, drinking, or smoking.
  • Eating, Drinking or Using Tobacco (46.151(a))
    A cook in the kitchen was observed drinking from an open cup and then placing the cup on the work surface. There is no eating, drinking, etc. in the food preparation area. Drinking may only be done from a lidded container which has a straw in it and do not place any drinks on food preparation surfaces. Corrected.
  • Preventing Cross-Contamination of Packaged and Unpackaged Food by Separation, Packaging & Segregation (46.281)
    In many of the refrigerators food was not covered. Food must be covered to prevent cross contamination. Correct immediately.
  • In-Use Utensils & Between Use Storage (46.302)
    At the front counter the knife used to cut foods from the steam table was stored between the steam table counter and the counter holding the dry heat hot holding unit. Do not store utensils between counters or equipment because this is not a washable area. Corect immediately.
  • Wiping Cloths Use Limitations (46.304)
    In the kitchen wiping cloths were stored in a dirty sanitizing solution. Discard the solution and store wiping cloths in a clean sanitizing solution.
  • Hot Holding Potentially Hazardous Foods (46.385(a)(1))
    Again the steam table is not holding food at the proper temperature. The foods not at the appropriate internal temperature were chicken and pork. The other meats in the steam table are in a liquid of some sort. The meats out of temperature were held dry. The pork was 122'F. and the chicken was 115'F.. Both were reheated to 165 and then placed in the steam table. Covering the meats may help to maintain temperatures. Monitor internal food temperatures.
  • Food Temperature Measuring Devices Provided (46.632)
    Not all refrigerators and freezers have thermometers in them. Provide thermometers to all refrigerators and freezers.
  • Equipment in Good Repair & Proper Adjustment (46.671)
    In the basement, the freezer closest to the steps is in poor repair. The insulation is exposed, it is rusting on the outside of the door, it is in need of defrosting. This unit is no longer acceptable. Replace the unit with a commercial ANSI approved unit. This unit continues to be used. The owner has stated he will cover the exposed insulation until he can obtain a new unit. This must be completed in 1 week, but a new approved unit is still required. Obtain a new unit or discontinue using the unit with-in one month.
  • Storing Clean Items (46.774)
    In he basement, single use items were stored on the floor. Store these items 6 inches off the floor.
  • Plumbing Facilities in Good Repair, Cross Connection Prohibited, Scheduled Inspections, Cleaning Water Reservoirs (46.825(b)-(e))
    In the front part of the basement it appears a pipe has leaked or there has been an overflow from the plumbing system. There is food depris on the floor. Also ther are open floor pipes and floor drain. Clean the floor and repair the source of the debris. Cap and cover pipes and floor drains.
  • Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
    Many walls in the back area have holes or broken areas in the vicinity of the floor/wall juncture. Repair all wall areas which are broken.

The reviews are disgusting and 1 time I went in before I knew all the disgustingness and there were roaches crawling on the walls, they must have mice and leave opened bags of beans and rice on the floor in the basement...... UGHHH... GROSS !!!!!!
