Observed wet wiping cloths in kitchen / food prep area, not being store in sanitizer solution.
- Cold Holding Potentially Hazardous Foods (46.385(a)(2)-(a)(5))
Cream pies, pumpkin pie, and egg custard was held at 47.4 °F verified by SANS probe thermometer, in the Pie case area, rather than 41°F or below as required. Pies were removed from case and placed in Kitchen Cold hold. Pies were baked and cooled this afternoon and placed in pie case at approx. 3:00 p.m. per the PIC.

Floor in the rear storage area, is made of bare wood, and is not durable, smooth, non-porous, non-absorbent, easily cleanable material.
