Observed turkey salad, ham, hard boiled eggs, sliced turkey and egg salad held at 53 degrees F not 41 degrees F as required by the food code. Temperatures were taken with two calibrated thermometers. Firm disposed of food items valued at $28.

Observed the quaternay ammonia sanitizing soltion in the three bowl warewashing sink is at 0PPm not 200PPM as required by the manufactures recommendations. This may be due to improper installation of the sanitizer bulk container.
- Frequency of Cleaning Nonfood-Contact Surfaces (46.714)
Observed a biuldup of food debris on the handles and door surfaces of the prep tables and microwaves. This is a second consecutive repeat violation.

- Reheating Food (46.365)
Hamburgers that were previously cooked amd cooled, were only reheated to 135 degrees F for hot holding and not 165 degrees F for 15 seconds as required. Firm reheated food to 165 degrees F and returned to hot holding.
