    The refrigerated units listed herein are not capable of maintaining food at temperatures of 41F or less: bar tap cooler second floor bar and the beer tap cooler in the third floor bar. Repair these refrigeration units so that they function properly and do not store any temperature controlled for safety food in these units until after they have been repaired. Parts were ordered.
  • Repair & Cleaning Various Premises, Structures, Attachments & Fixtures (46.981(a)-(c)(g)(n))
    A panel of stainless steel is pulling away from the wall behind the range in the second floor kitchen. Re-secure the stainlees steel to the wall.

    Potentially hazardous food stored in the refrigerated food prep unit in the second floor kitchen had internal temperatures ranging from 45F to 54F. Discard all potentially hazardous food stored in this unit. Cold hold all potentially hazardous food at temperatures of 41F or less at all times. Food was discarded by the cook.

Repair all of these refrigeration units so that they function properly and do not store any food in these units until after they have been repaired.
  • Food Temperature Measuring Devices Provided (46.632)
    The refrigerated prep unit in the second floor kitchen, the refrigerator in the third floor kitchen and the bbeer tap cooler at the second floor bar are not suplied with accurate thermometers. Supply these units with thermometers.
  • Hot Water Sanitization Temperature, & Chemical Sanitizing Using Detergent-Sanitizers in Manual Warewashing (46.676(d)(e))
    The rinse water in the second floor dish machine had temperatures of 149F and 154F and the gauge was not reading properly. Place all items in a sanitizing solution of proper concentration after they have been washed in this machine for at least one minute contact time. Repair the machine so that it functions properly.
  • Objective of Cleaning Grease & Soil Accumulations & Nonfood Contact Surfaces (46.711(b)(c))
    The non-food contact surfaces listed herein require cleaning to remove dust, food debris and/or spilled product: condenser coils on the second floor refrigerated prep unit, freezer in the second floor kitchen, cabinets in the second floor kitchen, True freezer in the basement kitchen, filters in the hood in the basement kitchen and the interior of the Kenmore freezer in the basement. Clean all non-food contact surfaces and maintain them in a clean condition.
