Observed food residue on interior of both microwave ovens. Correct today.

Wiping cloths observed stored in sanitizer bucket with sanitizer concentration in excess of 400 ppm. Use one Tablespoon or one capful of bleach to one gallon of water. Corrected during the inspection. Recheck of concentration was 200 ppm.
- Surface Characteristics of Indoor Areas of Food Facilities (46.901)
Observed grease on sides of fryers and under/behind these fryers. Observed food residue on floor of walk in cooler. Observed dust accumulation on fan guards of cooling unit in walk in cooler. Correct all within one week of this inspection.
