Food employee (woring in bakery/deli), observed wearing apron during smoke break, aprons are to be worn in the work space, removed before leaving to go on breaks.

Several roasted chickens/dinner food was held at 120 °F, in the hot hold unit located in front of deli, held for less then an hour, rather than 135°F or above as required. All were heated to 165F for 15 seconds then held at 135F and above. COS

Found all shelves in bakery with dust/old bakery food residue on them, fan guards & motor unit found with static dust accum. on them located in bakery walk-in cooler and meat dept. walk-in cooler. Also remove paint peeling from large walk-in freezer, (stainless steel in good condition underneath.)

Found several broken/loose floor titles & grease accum. under deep fryers and stove in bakery. Manager said they plan on replacing the tiles.

Found two lights in bakery, not working, replace with working bulbs. Found in milk walk-in cooler a few end caps were missing/broken, replace with new end caps.

Several 1/2 gallon containers of milk outdated, by one to two days.

A few opened commercially processed ready to eat food deli meats, located in the deli case, and held more than 48 hours, was not marked date open and date to be thrown out/removed from sell to the public. with the date it was opened.

Prepackaged Allen fruit & pudding filling food is not labeled properly with the ingredient statement/nutritional facts. 3 days to correct.

Found old plastic container used to heat corn in, in microwave, required characteristic of safe material/cookware to be used in microwaves, lead-free glass or ceramic/pottery to be used.COS Also found Hobart equipment used to cube steaks black plastic housing cracked and scratched. 14 days to replace this black plastic housing.
