Ambient air and surface temperature of cheeses in retail cheese cooler elevated to 48*F (internal temps of cheeses still at 41*F), PIC related that they must mannually defrost the unit routinely until a new part is installed for automatic defrost cycles.
- Sanitizing Solution Testing Device Provided & Used (46.634 & 46.674(e))
Now that we have chlorine bleach for sanitizing clean equipment and wiping cloth bucket, need chlorine test strips to check sanitizer concentration, 50 ppm required for dishwash sanitizing, 50-100 ppm for wiping cloths.
