RTE PHF was held at (52-53*F--ham, salami) in the Bev-Air prep cooler rather than 41°F or below as required in top food rail. The bottom area is at 35*F. However, this may be entirely due to towels being placed in the bottom of each stainless food insert which was preventing the cold from reaching the food. Towels were removed--ham & salami was discarded. Monitor temps to ensure compliance.

Thermometer for ensuring proper food temperatures was not calibrated. The food probe provided read 36*F in a 32*F ice bath. Calibrated during the inspection.

Cutting boards observed with deep scratches and scoring not allowing for effective cleaning and sanitizing. Removed during inspection. Resurface of replace prior to use.

Hand wash sink is not conveniently located in rear section of facility which is being used by Mrs G's to produce pepperoni rolls for sale at area flea markets. Area is not to be used until sink is available for employee hand washing. Note - No production in area at this time.
